Freezer Meals Month 2

Here is my plan for month 2.  Notice again that my count and dividing is for 2 adults and 1 toddler.  So if you have a family of 4 this will be more like 2 weeks worth of food instead of a little over a month.  Also I just steam some frozen veggies or toss a salad with most of these unless they are noted to be served with something else.

Freezer Meals, Month 2 (20/36)
Shopping List:

o   4 cans spaghetti sauce

Recipes for the Freezer Meals
1.       French Dip
a.       Ingredients
                                                               i.      3 lbs beef roast, halved
                                                             ii.      4 cups water
                                                            iii.      1 cup soy sauce
                                                           iv.      2 tsp rosemary
                                                             v.      2 tsp thyme
                                                           vi.      2 tsp garlic powder
                                                          vii.      2 bay leaves
                                                        viii.      ½ ground pepper
b.      Assembly Directions
                                                               i.      Divide between 2 freezer bags
c.       Cook directions
                                                               i.      Thaw overnight.  Crock pot on high 5-6 hours.  Shred and serve on rolls dipping in the juices left in the pot.  YUMMY YUMMY YUMMY!
2.       Turkey Breast of Wonder
a.       Ingredients
                                                               i.      1 (5-6 lb) Turkey breast, cut into 4
                                                             ii.      2 cups orange juice
                                                            iii.      4 can whole cranberry sauce
                                                           iv.      4 pkg onion soup mix
                                                             v.      Salt and pepper to taste
b.      Assembly directions
                                                               i.      Divide between 4 freezer bags
c.       Cook directions
                                                               i.      Thaw overnight.  Crock pot on low 8-9 hours. 
3.       Root Beer Chicken
a.       Ingredients
                                                               i.      2 lb chicken, strips
                                                             ii.      4 cups root beer
                                                            iii.      4 T Dijon mustard
                                                           iv.      4 T vinegar
                                                             v.      4 T oil
                                                           vi.      2 tsp salt
                                                          vii.      1 tsp rosemary
                                                        viii.      1 tsp garlic powder
b.      Assembly Directions
                                                               i.      Divide between 2 freezer bags
c.       Cook Directions
                                                               i.      Thaw.  Grill or bake chicken.  Serve with Fries and Veggie
4.       One Pot Spaghetti
a.       Ingredients
                                                               i.      2 lbs ground beef
                                                             ii.      2 onions, chopped
                                                            iii.      2 T minced garlic
                                                           iv.      1 box chicken broth
                                                             v.      2 cans spaghetti sauce
                                                           vi.      ½ cup water
                                                          vii.      16 oz spaghetti
                                                        viii.      ¼ cup Parmesan
b.      Assembly Directions
                                                               i.      Brown beef, onion and garlic
                                                             ii.      Add everything but noodles and cheese, mix well.
                                                            iii.      Divide between 4 freezer bags
c.       Cook Directions
                                                               i.      Thaw.  Add 4 oz pasta and bring to a boil.  Reduce heat and simmer 17-20 minutes till pasta is done.  Top with cheese to taste. 
5.       Lasanga
a.       Ingredients
                                                               i.      24 pieces lasagna noodles (uncooked)
                                                             ii.      2 lbs ground beef
                                                            iii.      1 lb Italian sausage
                                                           iv.      2 cans spaghetti sauce
                                                             v.      32 oz ricotta
                                                           vi.      4 cups mozzarella
                                                          vii.      1 cup water
                                                        viii.      4 eggs
                                                           ix.      4 t oregano
                                                             x.      4 t basil
                                                           xi.      1 t salt
                                                          xii.      1 t garlic
b.      Assembly Directions
                                                               i.      Brown meat.  Mix 2 cups mozzarella, ricotta, spices, and eggs.  Drain meat, stir in spaghetti sauce, add water.
                                                             ii.      Layer in 4 8x8 pans and top with remaining cheese.
                                                            iii.      Cover with plastic wrap and foil. 
c.       Cook directions
                                                               i.      Thaw.  Bake at 350 for 45-60 min.
6.       Hamburger Soup
a.       Ingredients
                                                               i.      2 lbs ground beef
                                                             ii.      1 onion, diced
                                                            iii.      Pepper
                                                           iv.      ½ t oregano
                                                             v.      ½ t basil
                                                           vi.      Salt
                                                          vii.      1 pkg onion soup mix
                                                        viii.      6 cups water
                                                           ix.      8 oz tomato sauce
                                                             x.      15 oz diced tomatoes
                                                           xi.      1 bag frozen peas
                                                          xii.      2 cup celery, sliced
                                                        xiii.      2 cup carrot, sliced
                                                        xiv.      Garlic salt
                                                         xv.      Parmesan cheese, to taste*
b.      Assembly Directions
                                                               i.      Brown ground beef and onion.
                                                             ii.      Divide all ingredients between 4 freezer bags.
c.       Cook Directions

                                                               i.      Thaw, bring to a boil.  Reduce heat and simmer till veggies are soft and tasty.  Serve with Parmesan cheese to taste.
