Honey Mustard Chicken

This is David's favorite new dish.  And I like it a lot too.  Mine never turn out as pretty as the picture but they are still delicious.  They are off the Weight Watchers site and sometime they can be snotty about letting you on if your not a member so I'm going to share the recipe here.   We don't use the scallions or dill but that is because I don't have them around the house all the time.  They are delicious! We serve them with sweet potato fries and green beans.  So much deliciousness!  *smacking of lips*

Crusted Honey Mustard Chicken (16 points)

Instructions

  • Preheat oven to 425°F. Coat a shallow pan with cooking spray.
  • In a small bowl, combine honey mustard dressing, salt, pepper, dill and scallions; remove 1/3 cup and set aside.
  • Place cornflake crumbs in a shallow bowl. Dip chicken into dressing mixture and then cornflake crumbs; place in prepared pan.
  • Bake until chicken is golden and no longer pink in center, about 15 minutes.
  • Drizzle remaining dressing mixture (the 1/3 cup that was set aside) over chicken breasts and serve. Yields 1 piece of chicken and about 1 1/3 tablespoons of dressing per serving.
